Oatmeal-Molasses Cookies

When she was around two years old, Rose had an elevated level of lead in her blood. This was due, most likely, to our former home which we renovated and which had some lead paint around the windows. Luckily, she did not have much lead and we were able to manage it (and home renovations were finished). The doctor prescribed iron supplementation as the way to chelate the blood and remove the lead.One way we got iron into her, since it's such a difficult mineral to absorb with a supplement alone, was with blackstrap molasses. She was happy to eat these cookies which have quite a bit of molasses in them and taste great!

Oatmeal Molasses Cookies

1-1/4 cup sugar
1/2 cup oil
6 Tablespoons molasses
1 whole egg and 1 egg white (I used two small eggs whole and the cookies were just a little runnier)
1-3/4 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old fashioned rolled oats
1/2 cup chopped nuts
1 cup raisins
1 cup chocolate chips

Preheat oven to 400 degrees (I think I did 375 deg. instead)
Cream sugar and oil.
Beat in egg and molasses.
Sift and/or mix flour, cinnamon, soda, salt; then stir into sugar mixture.
Mix in remaining ingredients.
Drop by spoonfuls onto oiled cookie sheet (or use parchment paper as I did).
Bake 8-10 minutes or until done.

Makes 3-4 dozen cookies.

I just made these last week and brought them along to various homeschool activities. One boy, who does a lot of baking himself, said they were the best chocolate chip cookies he's ever tasted! And I must say, that just made my day. Especially since he said it in front of my always-skeptical children.

You do need to like molasses to like these cookies, but somehow the combination of nuts (I used the odd choice of cashews chopped fine because they were what I had and they were perfect), raisins and chocolate chips with the cinnamon and molasses is yummy.

What a brilliant way to get iron into a child. there's only so much greens they're gonna eat, lol.

I've never seen blackstrap molasses here. I see it used a lot in American recipes. I'll ask around because it sounds tasty.

yum. i've been wanting to bake cookies but had a pyrex BLOW UP in my oven and it is taking f.o.r.e.v.e.r. to clean out. i wonder if i can bake cookies in my smaller toaster/oven thingie...hmmmm. i love molasses cookies!

The 7 Areas for Reduction

Today I want to write just a snippet on each of the 7 areas where we're reducing our consumption. See the Riot for Austerity page to learn more. 1. Electricity. No major sacrifices. We're still watching TV a little and I'm online way too much trying to keep up with this group (my latest obsession), but we're now turning both off at the power strip when they're not in use, instead of just at night when we go to bed. Also, many more appliances are getting unplugged when not in use. 2. Heating and Cooking Energy. We are using the a/c today due to temps in the 90s and very high humidity. That is my general rule for a/c use and always has been-it has to be over 90 degrees F. and humid. Tonight when the predicted cold front passes through we'll turn it off for at least the next week of predicted 80s. 3. Gasoline. On Family Meetings and Chores

ON FAMILY MEETINGS: On Friday night we held our first-ever Zahn Family Meeting. I've always felt that families who hold family meetings are so, well, organized and democratic and all that and we've just never gotten around to them (which speaks to my lack of organization, and probably democratic-ness, too). But on Thursday, after "crabbin' out" at the kids for not helping around the house enough, I decided to call a Family Meeting for the following night. I made the announcement to all, including dear husband, that the meeting would take place at exactly 6:30 p.m. after our Previously Scheduled Family Dinner at exactly 6:00 p.m. Just trying to be organized here... I asked the family members to come up with agenda items. Mine, of course, would be the subject of chores. I also said I would give a Treasurer's Report (a.k.a. "why we haven't paid your allowance since Christmas"). So the appointed hour came and the Meeting commenced. I asked for agenda...
