No-Knead Bread

Sorry to say I am still a bit "cruddy" though much better than before. It didn't help that Rose was up puking much of last night. Poor, poor child. We're not sure why. The sausage she and her brother ate for dinner? But Eli wasn't sick. Just the leftovers of the flu? Who knows. But we didn't get much sleep. And here we all are home with the sickies again. Ack!




But, enough about that. It's time to move on. I did manage to bake some of the famous "No-Knead Bread" as shared here by Mark Bittman of the New York Times. I've seen it in the paper, on Martha, online, everywhere. I decided I had to try it. And lo and behold, it turned out amazing just as everyone says. And it really is easy, if a bit awkward flinging wet dough around, onto towels and into pots, etc. But the bread was so, so worth it.

I was attracted to the recipe because the dough is actually fermented for at least 18-20 hours. I know that the long fermentation process makes wheat flour much more digestible. I still don't think I should eat it daily, although with the response of my family I may be making it daily for a while at least!

It was quickly devoured.

Unfortunately (*wink*wink*), it did "require" the purchase of this 6 quart red enameled cast iron pot from Chantal (yeah, yeah, I know I could've used my crock pot insert but I didn't think of it until it was too late!). Fortunately, we found it at T.J. Maxx for only $39 on clearance. George and I felt it was our lucky night! And besides, we have never had a roasting pan.

Thank you for stopping by my blog and leaving such a nice comment. I think I have a new hobby I want to start... It was so exhilarating to create the statue. I am making one for my cousin to place on her fireplace mantle- their nature shelf- this weekend.
I am searching through your post for the link to the bread recipe and cant seem to find it. Could you hold my hand and nose me the right way? LOL...

We like that recipe too (well, who doesn't, but as you said, the fermentation is the extra bonus).

The 7 Areas for Reduction
